Guilt-Free Baked Oatmeal Cups

Not that anyone ever feels guilty about oatmeal, but these are delicious little health bombs to start off your day on the right foot!

Prep Time 15 minutes

Cook Time 25 minutes

Servings 24

Ingredients

  • 1Cupcoconut oil, melted
  • 1Cuphoney
  • 4eggs
  • 4Cupsquick oats
  • 2Cupsold fashioned oats
  • 1Tbspbaking powder
  • 1/4tspbaking soda
  • 1 1/2tspsalt
  • 2Cupsmilk or non-dairy milk
  • Optnuts, dried fruit, chocolate chips, etc.

Instructions

  1. Preheat the oven to 300°. Line a muffin tin with papers.

  2. Blend all ingredients with a hand mixer.

  3. Spoon into the lined muffin tins and add extra toppings if desired. Note: You can also mix them into the batter, but I prefer on top so that I can make multiple different flavor options!

  4. Bake for 25-30 minutes. Tip: If desired, you can freeze these and grab only that day’s worth of oatmeal cups, and microwave to thaw.

These delicious sausage and cheese wonton bites are the perfect savory appetizer for all ages! Not only do they taste great, they are a fun treat visually to serve up at a party or for your family on an at-home movie night! Just 5 ingredients is all you need and you’ll be amazed at just how easy they are to make!

Prep Time 15 minutes

Cook Time 10 minutes

Servings 25 wontons

Ingredients

  • 1packagewonton wrappers
  • 1lbJimmy Dean® Hot Roll Sausage, cooked and drained
  • 1 1/2Cupsshredded cheddar cheese
  • 1 Cupshredded pepper jack cheese
  • 3/4 Cupranch dressing

Instructions

  1. Preheat the oven to 350 degrees. Press wonton wrappers individually into a muffin tin and bake for 5 minutes until light golden brown.

  2. Remove from the oven and place onto a cookie sheet. Repeat until all wrappers are baked.

  3. Mix the sausage, cheeses, and ranch dressing until well blended. Spoon into the wonton wrappers.

  4. Bake for 5-10 minutes, serve warm. Enjoy!

Individual Breakfast Casseroles

These muffins are a favorite for back to school time, and anytime I feel like I need to have something quick to heat up for my family in the mornings. Pop one in the microwave the next day and you’ve got a piping hot and filling breakfast!

Prep Time 15 minutes

Cook Time 25 minutes

Servings 12

Ingredients

  • 3Slicesbread, ripped into 1 inch pieces
  • 3/4Cupbreakfast meat of your choice, cooked and cubed
  • 3/4Cupshredded cheese
  • 1/2Cupveggies of choice
  • 12eggs
  • Splashmilk
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350°. Grease 1 muffin tin with cooking spray or butter.

  2. Rip bread into 1 inch cubes and place in the bottom of the prepared muffin tin. Can also substitute with leftover prepared hash browns to make it gluten free. Simply fill each muffin cup ½ of the way full.

  3. Top bread with meat, cheese and veggies of your choice.

  4. Mix eggs, milk, salt and pepper as if you’re making scrambled eggs. Pour over ingredients in muffin tin. I find it easiest to do this in a measuring cup for easy pouring. Tip - I also bake this on top of a cookie sheet just in case any of the eggs rise more than I expect and spill over!

  5. Bake at 350° for 25 minutes or until the egg is solid. Allow to cool for 5 minutes before removing from the muffin tin. Store leftovers in the refrigerator. Reheat leftovers for 25-30 seconds.

Banana Bread Muffins

Make your favorite banana bread with a fraction of the bake time. No more uncooked centers, no more waiting an hour to taste that fresh baked goodness! I’ve been making this recipe with my kids for several years. Younger ones have a blast smashing the bananas with a potato masher and older ones get good practice measuring out these simple ingredients.

Prep Time 10 minutes

Cook Time 22 minutes

Ingredients

  • 1/2Cupbutter, softened
  • 1/2Cupbrown sugar
  • 2eggs, beaten
  • 4bananas, crushed
  • 1 1/2Cupflour
  • 1tspbaking soda
  • 1/2tspsalt
  • 1/2tspvanilla
  • 1Cupchocolate chips, optional

Instructions

  1. Preheat oven to 350°. Prepare mini or regular muffin tin with cooking spray.

  2. Cream together Butter and Sugar.

  3. Mix in Eggs and Bananas.

  4. In a separate bowl, mix together Flour, Baking Soda and Salt. Slowly mix into the Butter mixture.

  5. Add Vanilla. Mix well.

  6. Add Chocolate Chips if desired.

  7. Spoon into the prepared mini or regular muffin tin, filling each cup 3/4 full.

  8. Bake at 350° for 15 minutes if using a mini muffin tin, or 22 minutes for a regular muffin tin.

Dessert Heaven Bites

It’s like all of the best sweet treats wrapped up together in the best dessert you will have and a huge crowd pleaser!

Prep Time 10 minutes

Cook Time 16 minutes

Ingredients

  • 1pkgcookie dough (break & bake)
  • 6Reese’s full size cups
  • 1brownie mix
  • Ingredients for brownie mix (eggs, water, oil)
  • cooking spray

Instructions

  1. Preheat oven to 350°. Grease muffin tin.

  2. Gently press 1 1/2 cookie dough squares into every muffin cup.

  3. Place an unwrapped Reese on top of cookie dough

  4. Prepare brownie mix as directed on box

  5. Once the brownie mix is ready, use a spoon and place about 1 1/2 spoonfuls of batter on top of the Reese/cookie (or until it’s covered)

  6. Place in oven and bake for 16-18mins depending on your oven. Allow to cool.

  7. Top with vanilla ice cream and enjoy!

Ingredients

  • 1Cupflour
  • 2Tbspsugar
  • 1tspbaking powder
  • 1/2tspbaking soda
  • 1/2tspsalt
  • 3/4Cupbuttermilk OR 2T Vinegar, fill with milk to 3/4 C. Let sit for 5 minutes.
  • 1egg
  • 2TbspButter Melted
  • 1/8CupWater

Instructions

  1. Preheat oven to 350°. Prepare mini or regular muffin tin with cooking spray.

  2. Whisk Flour, Sugar, Baking Powder, Baking Soda and Salt.

  3. Add Buttermilk, Egg, melted Butter and Water.

  4. Spoon into the prepared mini muffin pan, filling each cup 3/4 full.

  5. Drop in blueberries, chocolate chips or any other desired ingredients.

  6. Bake at 350° for 10 minutes if using a mini muffin tin, or 14 minutes for a regular muffin tin.

Breakfast or Dinner this easy to make Monkey Bread is hassle free, kiddo approved and so yummy!! Also, a great recipe for kiddos help!

Prep Time 18 minutes

Ingredients

  • 1/2Cupsugar
  • 1Tbspcinnamon
  • 2cans of biscuits (I used off brand home style biscuits)
  • 1/2Cupbutter (8 tablespoons)
  • cooking spray

Instructions

  1. Preheat oven to 350°. Grease muffin tin thoroughly

  2. In a mixing bowl whisk together sugar and cinnamon.

  3. Open containers of biscuits. On a cutting board, use a pizza cutter and cut each individual biscuit into 4.

  4. Toss the dough pieces in the sugar/cinnamon mixture (there will be leftover cinnamon/sugar mixture).

  5. Once dough pieces are coated start adding to muffin tin cups. Fill each cup until it’s about 2/3rds full.

  6. Melt butter in a glass measuring cup or microwave safe bowl

  7. Add the remaining cinnamon/sugar mixture to the melted butter. Stir until well mixed

  8. Pour the butter mixture over dough in every muffin cup. About 2-3 tablespoons.

  9. Place in oven and bake for 16-18mins
